Ruby Wong’s Go-Down's local cocktails shine alongside drinks made by MGallery for World Cocktail Day.

The bar’s unique theme has made it a destination in itself. Guests sneak in through a hidden entrance in the hotel bookcase and go down into another time and another place. Brightly lit balloon lanterns illuminate a piece of the Chinese waterfront.

Pull up a stool and check out Noodle Alley before proceeding further. Better load up with their selection of dimsum and noodle dishes from around the world before a night of drinking.

For this evening, Admiral Hotel Manila - MGallery unveiled a special menu composed of drinks by mixologist Matthias Giroud for the World Cocktail Day celebrations of MGallery Hotels around the world.

Giroud, the founder of mixology company, L’Alchemiste, takes drinkers around the world through specially sourced ingredients from each of the countries that serve as inspiration for the menu’s mocktails and cocktails.

The selection includes two mocktails: the green tea and apple juice-based Chinese Elixir and the coconut-forward Folk Tale of The Mekong.

For those who want that buzz of alcohol, there’s the rum-based Thai Sunfire with bright notes of mango, coconut; the Sydney Opera Symphony with gin and cool eucalyptus wattle; and the classy Love Letter from Provence with white wine, champagne and lavender.

The hotel took this chance to showcase the drinks from the award-winning Ruby Wong’s GoDown crew. The fruity Original Sin made with peach-infused VS Cognac, and the hot and spicy Fiery Dragon with mezcal bell pepper cordial and “fire water” were sips full of character.

But the best local drink was the Bukayo Mon Amour with a skewer of bukayo spiked with rum that’s nibbled with the latik-infused spiced rum with drops of sesame oil for that rich thick mouthfeel.

If anything, the local drinks showed as much character and unique flavors as the imports. Maybe in the coming years, these, particularly the Bukayo Mon Amour, get considered for inclusion in the World Cocktail Day at the MGallery hotels abroad.

Ruby Wong’s signature cocktails are available year round. The MGallery World Cocktail Day cocktails will be available at Ruby Wong’s GoDown at Admiral Hotel Manila - MGallery only until June 13.
