Bistronomy, a combination of the two words 'bistro' and 'gastronomy', is a restaurant culinary style originating in France. It offers fast casual bistro dishes with elegant cooking methods to give the guests a gastronomic experience. Also often described as casual fine dining, it’s been a prevalent trend abroad and even tasting menu restaurants with Michelin stars would open their more casual bistronomic concepts. An affordable option without sacrificing the quality of ingredients, I definitely see why people are drawn to this.

Meanwhile, in the Philippines, a restaurant is at last categorically owning the bistronomy concept through the launch of its second Balmori Rockwell Pop-Up residency for only a month. Your Local, helmed by the extremely talented chef Patrick Go, is transitioning to have a modern Asian bistronomy-style menu with subtle Filipino influences.

 

“I love combining different Asian food references with Filipino ingredients, cooking techniques, and food memories. That’s why in the last few years, I’ve strived to redirect the cuisine of Your Local in that direction. We'll be doing both small and sharing plates, and the menu is all about experiencing communal dining in a very refined way,” says Go.

 

Dubbed as “Your Local at The Balmori Chef’s Table Round 2," here’s a sneak peek of some of the creative and refined dishes that will be served for a limited engagement. Local cocktails with Asian flavor profiles and natural wines from importer Some Love were also curated to pair excellently.

Your Local at Balmori Suites runs from May 18 to June 16. Reserve via 0945-4270054.

Lunch from 11 a.m. to 2 p.m.; afternoon tea from 2-5 p.m.; and dinner from 6-10 p.m. 

The permanent location of Your Local at Esteban, Legazpi Village, Makati remains open while the pop-up is ongoing.
