The thing about The Café, the main dining space of the Hyatt Regency Manila, you can’t fall in love with your favorites. The next time you visit, it is likely that the buffet offerings have changed. But the good thing about their fast evolving menu is, apart from ensuring diners a different experience at any day of the week, there is always a reason to come back and make new favorites.

The Café recently resumed its lunch and dinner service after an extended period of just being limited to serving breakfast buffet due to the pandemic. The buffet stations consist of classics and innovations from Hyatt’s in-house chefs comprising Italian and other Western favorites; Asian comfort fare such as popular Filipino dishes (during our visit, there was Pork Menudo, Chicken Adobo and Bistek Tagalog); a selection of Japanese staples (California Maki, Spicy Salmon Rolls, Salmon Sashimi); and a ‘Carving of the Day’ spot which is a dinner exclusive.

Charcuteries, breads, cheeses, seafood (the Baked Salmon section is always a hit), soups, salads, and an array of pastries, sweets and fruits complete the spread. There’s even a snack station with potato wedges, shrimp crackers, ‘Twister’ fries, and the best chicharon we’ve tasted in a while—it has a soft crunch and is wildly tasty at the same time. Dishes prepared à la minute by experienced chefs animate the live culinary theater at the restaurant’s vibrant cooking stations.
