Manila has no shortage of Spanish restaurants, some better than others. But, when was the last time you went to one, where you actually felt like you were transported back to Spain — and to Barcelona in particular?

El Born hopes to do just that. The restaurant that takes its name from the cool and creative quarter of Barcelona city in the Catalan region of Spain is one of the new ones to open in the Mitsukoshi Mall in BGC.

In a city with self-styled Spanish restaurants popping up everywhere, El Born hopes to set itself apart by bringing authentic Catalan and Spanish flavors in a setting that’s as close as it can get to a typical neighborhood restaurant on the streets of Barcelona or the coastline of Tarragona.

“It was important for us to have in the menu some classics,” said Andres Poy, one of the partners at El Born.

The short and curated menu features classics sprinkled in with a few original ideas concocted by executive chef David Amoros, a native of Catalunya like his childhood friend Poy.

Amoros was once a popular DJ in Spain; that’s probably why he’s so good at mixing and editing, getting a feel of the room and innovating, when needed. His dishes may be classics, but there’s a lot that seems original and even surprising to those who travel often to Spain.
